This week has been all about feeling good now and not putting your life on hold whilst you try to lose weight or get into shape. Life is for the living!
Enjoying food is a massive part of this. We all love food but when the balance shifts into eating too much junk food and not enough ‘real’ food, that is when we start to feel rubbish. Take back control by focusing on feeding yourself with foods that fill you with energy and leave you glowing from the inside out. This isn’t about a diet that leaves you feeling miserable and hungry, it’s about foods that nourish and nurture.
Today’s recipe will most definitely make you feel great. Try it tomorrow morning for the perfect Saturday breakfast.
Scrambled eggs, smoked salmon and roasted tomatoes on sourdough toast
Why is it going to make you feel fabulous?
- Eggs are full of nutrients – a massive range that all help keep your body in good working order. Plus the white is high in protein so will keep you fuller for longer
- Smoked salmon is high in healthy fats including omega 3’s. These help brain function and your heart. It is also high in protein so all good!
- Tomatoes are high in lycopene which is a powerful antioxidants. These protect your body from disease and help your skin glow.
- Sourdough bread is quite simply amazing! It tastes fab and the fermentation process makes it more nutritious and easier for the body to digest whilst still being fairly low GI (so no blood sugar spikes).
All in all, it’ll leave you full of energy and feeling great for the day ahead. Start the day well and you are much more likely to keep going. Add a side of spinach for extra iron and health benefits. Feed your body with love and health and you WILL feel fabulous!
Ingredients (for 2) :
- 3 or 4 eggs
- splash of milk per egg
- salt and pepper to season
- 100g smoked salmon
- large handful of baby tomatoes (I love the ones on a vine)
- Olive oil
- 2 slices of sourdough bread
Method:
- Heat up the oven to around 180 degrees
- Put tomatoes into an ovenproof dish, drizzle with tiny bit of olive oil and salt and pepper and pop into the oven (for around 10 mins)
- Pop the sourdough in the toaster
- Mix eggs and milk and whisk up
- Pop into a pan and gently cook over a medium heat – mixing regularly so it doesn’t stick to the bottom
- It should all be done roughly at the same time so once eggs are nice and fluffy, pile them on top of the toast with strips of smoked salmon and the tomatoes
