Banana pancakes feel like a completely indulgent breakfast but not only are they super quick to make, they are amazingly healthy! They only contain eggs and bananas so they’re a great source of protein to start the day. This means they will keep you nice and full all morning long. This recipe makes about 6 mini banana pancakes.
Ingredients for banana pancakes:
- 2 medium eggs
- 1 ripe banana
Method for banana pancakes (couldn’t be easier!):
- Mash the banana in a mixing bowl
- Break the eggs into the bowl and beat them into the banana
- Heat up a pan with a tiny bit of oil (coconut or olive oil)
- Dollop a couple of tablespoons into the pan to form a small pancake – smaller ones are much easier to flip
- After a couple of minutes, gently ease up the edge and see if it is golden underneath, if it is, use a spatula to get underneath and flip it over
- Give in another couple of minutes on the other side then pop onto a plate and do the next
- You should end up with a stack of 6 small pancakes
- Serve with whatever topping you feel like – I love cherries heated gently in a pan with seeds on top!
