Sweet potato nachos

This one takes a bit of time to prepare but for a night in front of a good film, it’s definitely worth it. The ‘nachos’ are a super source of healthy, low GI carbs. Plus you get healthy fats from the guacamole and a good hit of antioxidants from the homemade tomato salsa. Enjoy!

Ingredients for the ‘nachos’(serves 2-3)

  • 3-4 large sweet potatoes
  • Drizzle of olive oil
  • Paprika

Method:

  1. Preheat the oven to 220 degrees
  2. Prepare the sweet potatoes by slicing them as thin as possible (or as thin as you want…some prefer them a little chunkier!)
  3. Pop them into a bowl with a drizzle of olive oil and a generous sprinkle of paprika. Give it a good mix so all the slices are evenly coated
  4. Spread them out evenly on a baking tray and pop in the oven
  5. Bake for around 15 minutes – although it depends how thin the slices are, so keep an eye on them – then flip them over and cook for a further 15 mins or so until golden brown and slightly crispy
  6. Just before taking them out, you can sprinkle a little grated cheese over the top so it melts over them – try not to overdo it on cheese though!
  7. Take out the over and layer into a big bowl/ dish with the salsa and guacamole and another little sprinkle of cheese if you want.
  8. Enjoy whilst hot. Yum!
