Prawn and chilli spaghetti

This is a super quick dinner that tastes amazing. It’s fresh and full of goodness. Prawns are a fab source of protein, low in calories and full of vitamins and minerals including zinc, iron and vitamin E. The tomato puree provides a powerful hit of lycopene which protects your body from disease. Add in chilli to give your metabolism a real kick and squeeze over the juice of a fresh lemon for vitamin C.

Ingredients for 2-4:

  • Prawns (150g for 2 but more for 3 or 4)
  • Wholemeal spaghetti  (portion size tip: make a small circle with your index finger so the nail and top part of finger is lying flat against your thumb. Fill that circle with spaghetti – that’s approximately enough for 1 person!)
  • 1 or 2 chopped red chillis
  • 3 cloves of garlic crushed or finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons tomato puree
  • Glug of white wine
  • Juice of 1 lemon
  • Drop of worcester sauce
  • Tablespoon of mixed herbs
  • Handful of fresh coriander
  • Salt and pepper to taste

Method:

  1. Put the spaghetti on to cook
  2. Heat up oil in separate pan or wok
  3. Gently fry garlic and chilli
  4. Add prawns and cook for couple of minutes
  5. Season with salt and pepper
  6. Add wine, tomato puree, Worcester sauce and mixed herbs
  7. Drain spaghetti once it’s cooked and add it to wok
  8. Give it a mix and squeeze over the lemon
  9. Serve with fresh coriander on the top
