This is a super quick dinner that tastes amazing. It’s fresh and full of goodness. Prawns are a fab source of protein, low in calories and full of vitamins and minerals including zinc, iron and vitamin E. The tomato puree provides a powerful hit of lycopene which protects your body from disease. Add in chilli to give your metabolism a real kick and squeeze over the juice of a fresh lemon for vitamin C.
Ingredients for 2-4:
- Prawns (150g for 2 but more for 3 or 4)
- Wholemeal spaghetti (portion size tip: make a small circle with your index finger so the nail and top part of finger is lying flat against your thumb. Fill that circle with spaghetti – that’s approximately enough for 1 person!)
- 1 or 2 chopped red chillis
- 3 cloves of garlic crushed or finely chopped
- 2 tablespoons olive oil
- 2 tablespoons tomato puree
- Glug of white wine
- Juice of 1 lemon
- Drop of worcester sauce
- Tablespoon of mixed herbs
- Handful of fresh coriander
- Salt and pepper to taste
Method:
- Put the spaghetti on to cook
- Heat up oil in separate pan or wok
- Gently fry garlic and chilli
- Add prawns and cook for couple of minutes
- Season with salt and pepper
- Add wine, tomato puree, Worcester sauce and mixed herbs
- Drain spaghetti once it’s cooked and add it to wok
- Give it a mix and squeeze over the lemon
- Serve with fresh coriander on the top
