Popcorn

Popcorn is amazing for when you need a little treat but don’t want to ruin all your hard work. Popcorn on its own is naturally low in fat and calories. It’s only the oil/ sugar/ salt toppings that are added to it at the cinema that turn it into an unhealthy snack. If you make your own with your own toppings, you can get all of the benefits and none of the added nasties!

Method:

  1. Heat a large saucepan (which has a lid!) with a little oil
  2. Add the popcorn according to instructions on the packet
  3. Put the lid of the saucepan on and listen for the popping – a saucepan with a clear lid is really handy for this as you can see the kernels start to pop (kids love to watch!)
  4. Once the popping has stopped, take it off the heat, pop in a bowl and add the toppings you fancy

Here are some of my favourite toppings but try experimenting with your own…

When you fancy something sweet:

  1. Drizzle of honey and cinnamon is delicious. The addition of cinnamon helps control the sugar levels from the honey.
  2. Melt some dark chocolate (ideally above 70% cocoa solids so you get plenty of antioxidants with less sugar) and drizzle over the top – let it cool before tucking in
  3. Grate a lemon zest and cinnamon with a little  melted butter
  4. Add a tablespoon of nut butter (smooth mixes better)and stir into hot popcorn…nut butter combined with dark chocolate is ridiculously good!

When you prefer savoury:

  1. Drizzle a little olive oil over the popcorn with a sprinkle of chilli powder and paprika. Add some finely chopped fresh chillis if you love a real kick.
  2. Grate a small amount of fresh parmesan with a generous sprinkle of salt and pepper – simple but delicious
  3. Try a little oil with some chopped up fresh herbs
