There is nothing better than a lovely lazy morning. This gorgeous recipe is simple and healthy yet feels totally indulgent.
The healthy fats from the avocado and smoked salmon will get you glowing from the inside. Eggs provide protein and a whole range of vitamins and minerals. The lycopene from the baby tomatoes help protect your body. Serve with wholemeal/ rye toast to give a low GI source of carbs, helping you stay fuller for longer.
Ingredients (for 2):
- couple of slices of wholemeal/rye/ pumpernickel bread (toasted)
- medium avocado sliced
- couple of handfuls of baby tomatoes (chopped)
- a few slices of smoked salmon
- 2 – 4 eggs (depending on how hungry you are!)
Method:
- Toast the bread and assemble avocado, chopped tomatoes and smoked salmon on top
- Poach the eggs for a couple of minutes (take care not to overcook them – you want a nice runny yolk)
- Grind a bit of black pepper over the top
- Enjoy!
