Peanut butter cookies

These taste so naughty that it’s hard to believe they are healthy – yet they are! They are full of nuts which provide a good hit of protein as well as healthy fats. Of course, nuts are also high in calories so stick to one if you can! I like to add dark chocolate chunks (anything higher than 70%) to make them even more delicious as well as providing more antioxidants. The oats and cinnamon help slow down the release of sugar, giving a steady stream of energy that will last all afternoon.

Ingredients:

  • 180g oats
  • 1 egg
  • 2 tablespoons milk
  • 2 tablespoons of honey
  • teaspoon of cinnamon
  • 2 tablespoons of nut butter (opt for 100% nut variety)
  • 2 squares of dark chocolate broken in chunks

Method:

  1. Preheat oven to 200 degrees
  2. Mix all the ingredients together in a large mixing bowl
  3. Dollop spoonfuls onto a baking tray
  4. Bake for around 20 minutes or until they are golden brown
  5. Let them cool before serving.
