The salmon and nuts are an excellent source of omega 3’s (healthy fats) which leave your skin glowing and heart healthy. Serve with a colourful salad and healthy grains and this is a pretty perfect dinner.
Ingredients (for 2):
- 2 salmon fillets
- A couple of handfuls of nuts – walnuts work especially well
- A handful of breadcrumbs (make with wholemeal bread if you can)
- A drizzle of olive oil
- A tablespoon of mixed herbs
- Fresh coriander
- A squeeze of lemon
- Salt and pepper to taste
- A packet of mixed grains of your choice (the ready cooked ones are perfect and super quick)
- Salad leaves and whatever other salad ingredients you fancy (tomatoes, cucumber, peppers, fresh herbs…the more the merrier)
Method:
- Prepare the nutty topping by popping the nuts, olive oil, breadcrumbs, mixed herbs, coriander, lemon and salt and pepper into a food processor/ blender and whizzing up until it forms a crumbly paste
- Add in the seeds
- Pop the salmon fillets onto a baking tray and press the nutty topping on the top of each fillet
- Cover and refrigerate for an hour or so
- Preheat oven to 200 degrees
- Bake salmon for around 20-25 minutes until the salmon has turned light pink and slightly flaky
- Prepare the grains as to the packet instructions
- Prepare your salad to go with the salmon
- Serve altogether with another squeeze of lemon on top
