Homemade granola

Shop bought granola tends to be ridiculously high in sugar so try to avoid. Instead, make a batch of homemade – it keeps for ages and is delicious. Plus, as you made it, you know exactly what went into it. The oats provide lasting energy and plenty of B vitamins and the added seeds, nuts and dried fruit give protein and even more energy. Perfect for a quick breakfast when you haven’t got much time. Play around with the ingredients until you find a recipe that you love. You can just serve it with milk (dairy/ almond/ coconut, etc) but I love it over fresh fruit and natural yoghurt.

Ingredients (to make enough for several breakfasts):

  • 300g oats (large ones)
  • 2 large handfuls of seeds
  • 1 large handful of mixed nuts
  • 1 large handful of dried fruit
  • 2 tablespoons of coconut oil
  • 2 tablespoons of honey/ agave nectar

Method:

  1. Preheat oven to 200 degrees
  2. Mix all the ingredients together apart from dried fruit
  3. Spread over baking tray (possibly in 2 batches if you need to). Make sure the layer is quite thin.
  4. Bake for around 15 minutes then add in dried fruit
  5. Bake for a further 5-10 mins
  6. Let it cool completely before breaking it up and popping into airtight container – it will keep for 3 -4 weeks
