Fruit cakes

If you are someone who craves something sweet with an afternoon cuppa, then this recipe is for you! The dried fruit and apple juice provides natural sweetness and plenty of fibre. Plus, the added cinnamon acts to slow down the release of sugar into the bloodstream.

Ingredients:

  • 200g raisins/ sultanas/ dried fruit of your choice
  • 200 ml apple juice
  • 1 mashed banana
  • 2 eggs
  • 200g wholemeal flour
  • 1 ½ teaspoons ground cinnamon
  • ½  teaspoon salt

Method:

  1. Preheat oven to 200 degrees
  2. Pop your dried fruit into a big mixing bowl along with the apple juice. Mix it up and leave on the side to soak.
  3. Mash a banana into a bowl
  4. Break 2 eggs into a jug and beat them with a fork until they are frothy
  5. Add the bananas and beaten eggs to the big mixing bowl with the dried fruit and apple juice
  6. Weigh out the flour, cinnamon and salt and put it into the big mixing bowl and give it all a good mix
  7. Grease a muffin/ cake tray and spoon the mixture into each hole (it should make about 8 individual cakes)
  8. Pop into the oven for around 30 minutes. Test they are done by inserting a skewer into each one and making sure it comes out clean.
