Energy balls

These little balls pack a powerful punch. They are full of goodness and guaranteed to put a spring in your step! Have these on stand-by for when you need an injection of energy. Just before or after exercise works really well. There are many, many ways you can adapt these. Just use whatever you have to hand! Plus, they are completely delicious and feel like a bit of a treat!

Ingredients:

(Amounts are very approximate and depend on personal taste so adjust to suit you.)

  • A few large handfuls of dates (the softer the better and buy ones which are already stoned)
  • 1 tablespoon of coconut oil
  • 2 or 3 tablespoons of a nut butter
  • 2 tablespoons of cacao powder
  • 1 tablespoon (any or all) : flaxseed/ chai seeds/ maca powder/ hemp protein powder
  • Couple of handfuls of nuts
  • Couple of handfuls of dried fruit – raisins/ cranberries, etc

Method:

  1. Whizz up the nuts in a food processor until they are finely chopped
  2. Add in the dates and pulse until they are chopped up and starting to stick together in clumps (you might need to scrape down the sides a few times)
  3. Add in the other ingredients apart from dried fruit and get it all mixed up together.
  4. Finally add in any dried fruit you’ve got and form into small balls.
  5. Pop them into the freezer for about 30 minutes to set. You can store them in an airtight container for around 3 days. Or, if you want them to stay fresh for longer, keep them in the freezer and just take them out when you want them. They only take around a minute or so to defrost at room temperature.
