Dark chocolate and cranberry cookies

Sometimes only a biscuit will do. These are really tasty as well as being nice and healthy. The oats provide long lasting energy to get you through the afternoon. All natural and all good.

Ingredients (to make around 12 small cookies):

  • 2 ripe bananas
  • 180g oats
  • 2 tablespoons milk
  • 1 egg
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • Handful of dried cranberries
  • 3 squares of dark chocolate chopped into chunks

Instructions:

  1.  Preheat oven to 200 degrees
  2.   Mash up the bananas in a big mixing bowl
  3.   Add in the oats, milk, honey, cranberries, choc chunks and cinnamon . Give it a really good mix
  4.   Break in the egg and mix it all up (if it is too runny, add a few more oats)
  5.   Dollop spoonfuls of the mixture straight onto a greased baking tray (or pop baking parchment/ foil on it). If you don’t mind getting your hands messy, then form little balls and then squash them gently onto the baking tray.
  6. Bake in the oven for around 20 minutes or until the biscuits are nice and golden
  7. Allow them to cool on the baking tray. Enjoy with a cup of tea! They will keep for around a week in an airtight container.
