Beef, ginger and chilli stirfry

This is  a super quick dinner so perfect for mid week when you don’t have much time. This recipe is with beef but you can swap it for any other meat/ fish or even just have it with veg. Play around with the ingredients and mix and match with whatever you have in the fridge!

Ingredients (serves 2-3 with enough for leftovers):

  • 400g beef cut into strips
  • 2 garlic cloves crushed and chopped
  • 1 onion chopped
  • 1 teaspoon of ginger grated
  • 2 peppers of any colour
  • Handful or two of green beans
  • Couple of broccoli florets
  • Handful of cashew nuts
  • Sprinkle of sesame seeds
  • Drizzle of honey
  • 2 tablespoons of soy sauce
  • 1 red chilli finely chopped
  • Olive oil

Method:

  1. Heat a tablespoon of oil in a wok
  2. Add beef strips and gently fry until brown
  3. Drain off any excess fat and move beef to side of wok
  4. Pop in onions, chilli, garlic, sesame seeds and ginger and cook for a couple of minutes
  5. Add rest of veggies along with soy sauce , honey and cashew nuts
  6. Give it a good mix and leave to cook for a further 5-10 mins
  7. Serve with wholemeal rice or noodles
