This is a super quick dinner so perfect for mid week when you don’t have much time. This recipe is with beef but you can swap it for any other meat/ fish or even just have it with veg. Play around with the ingredients and mix and match with whatever you have in the fridge!
Ingredients (serves 2-3 with enough for leftovers):
- 400g beef cut into strips
- 2 garlic cloves crushed and chopped
- 1 onion chopped
- 1 teaspoon of ginger grated
- 2 peppers of any colour
- Handful or two of green beans
- Couple of broccoli florets
- Handful of cashew nuts
- Sprinkle of sesame seeds
- Drizzle of honey
- 2 tablespoons of soy sauce
- 1 red chilli finely chopped
- Olive oil
Method:
- Heat a tablespoon of oil in a wok
- Add beef strips and gently fry until brown
- Drain off any excess fat and move beef to side of wok
- Pop in onions, chilli, garlic, sesame seeds and ginger and cook for a couple of minutes
- Add rest of veggies along with soy sauce , honey and cashew nuts
- Give it a good mix and leave to cook for a further 5-10 mins
- Serve with wholemeal rice or noodles
