Homemade salsa

Salsa can be eaten as a side dish to almost any meal or as a snack – try it with the sweet potato nachos. Delicious, fresh and full of goodness!

Tomatoes are an amazing source of lycopene which fights disease and helps protect our bodies. Chilli will revs up metabolism and fresh lime and coriander provides an extra little burst of goodness.

Ingredients:

  • Large handful of baby tomatoes
  • Half or whole red chilli
  • Handful of coriander
  • Juice of a lime
  • Salt and pepper

Method:

This really couldn’t be easier! Chop it all up, squeeze over the juice from the lime and add a pinch of salt and pepper. If you can, leave it for a couple of hours so the flavours come out.
