Pitta pizza – not just for kids!

This one isn’t just for children! It makes a super quick lunch that can be cooked and taken cold in a lunchbox to work – makes a nice change to sandwiches! The pitta bread provides a good source of carbohydrates for energy and the tomato puree is jam packed with antioxidants (contains more than fresh tomatoes). Add a load of other veggies on top and a source of protein and you’ve got a winning lunch.

Ingredients (for 1 person):

  • 1 wholemeal pitta bread (or wholemeal wrap if you prefer your base thin and crispy)
  • Tomato puree
  • Sprinkle of cheese
  • Any other toppings you fancy – chopped onion, an egg (just crack it into the middle and it will cook with the pizza), ham, spinach, tomatoes, asparagus, mushrooms, sweetcorn, peppers…the options are endless!

Method:

  1. Preheat the oven to 190 degrees
  2. Spread the tomato puree on the pitta/ wrap
  3. Sprinkle over cheese and any of the other ingredients you fancy
  4. Pop in the oven for about 10 minutes or until the pitta/ wrap is crispy
  5. Serve with a handful of fresh spinach or salad leaves. Delicious!
