Honey roasted chickpeas

Chickpeas are a fab source of protein and fibre as well iron, magnesium and B vitamins (amongst others). They are naturally low in fat and will fill you up beautifully!

Ingredients:

  • 400g tin of chickpeas
  • drizzle of olive oil
  • 1/2 a teaspoon of paprika
  • zest of a lemon
  • couple of handfuls of mixed seeds and or nuts
  • 1 tablespoon honey

Method:

  1. Preheat the oven to 170 degrees
  2. Drain the can of chickpeas and give them a rinse under cold water
  3. Dry using kitchen towel and put into a bowl
  4. Drizzle over the olive oil and sprinkle in the paprika
  5. Mix it all up so the chickpeas are coated and spread onto a baking tray and roast for around 10 minutes until they are just starting to colour
  6. Take them out the over and scatter over the seeds and lemon zest
  7. Drizzle over the honey and gently mix them all up so they are evenly coated
  8. Pop them back in the oven for another 10 minutes or so until they are golden brown and crispy
  9. Take them out the oven and leave to cool before tucking in! Yum!
