Chickpeas are a fab source of protein and fibre as well iron, magnesium and B vitamins (amongst others). They are naturally low in fat and will fill you up beautifully!
Ingredients:
- 400g tin of chickpeas
- drizzle of olive oil
- 1/2 a teaspoon of paprika
- zest of a lemon
- couple of handfuls of mixed seeds and or nuts
- 1 tablespoon honey
Method:
- Preheat the oven to 170 degrees
- Drain the can of chickpeas and give them a rinse under cold water
- Dry using kitchen towel and put into a bowl
- Drizzle over the olive oil and sprinkle in the paprika
- Mix it all up so the chickpeas are coated and spread onto a baking tray and roast for around 10 minutes until they are just starting to colour
- Take them out the over and scatter over the seeds and lemon zest
- Drizzle over the honey and gently mix them all up so they are evenly coated
- Pop them back in the oven for another 10 minutes or so until they are golden brown and crispy
- Take them out the oven and leave to cool before tucking in! Yum!
