Avocado, sun-dried toms & mozzarella wrap

Mix up your lunch time sandwich by opting for a wholemeal wrap – quick to make and easy to transport! This one is full of healthy fats from the avocado, calcium and protein from the mozzarella and antioxidants from the sun dried tomatoes. Add in some fresh raw spinach (for iron and more vits and minerals) and you’ve got a lovely range of nutrients in one meal. You can add in some lean meat or fish to add a little more protein- the options are endless!

Ingredients (for 1 wrap) :

  • 1 wholemeal wrap
  • Half a small avocado
  • A few sun dried tomatoes
  • A few slices of a mozzarella
  • A large handful of fresh raw spinach

Method:

  1. Pop it all into the middle of a wrap
  2. Fold up the sides and wrap in foil to keep fresh
  3. Take with you and enjoy at lunch. Job done!
