If you’d normally opt for baked potatoes, make the switch now to sweet potato. They are low GI so keep you full for longer and don’t cause a rush of sugar into the blood stream. Sweet potatoes also contain beta cartene (vitamin A), vitamin C and vitamin b6 (just to mention a few) making them amazing for energy, your immune system and skin. As they are sweeter than normal potatoes, the feta cheese balances it perfectly. Although feta is a little high in sodium, it is one of the lower calorie cheeses and its strong flavour means you only need to add a little.
Ingredients (for 1):
- One medium sweet potato
- A matchbox size piece of feta (crumbled)
- Small handful of baby tomatoes chopped
- Handful of sweetcorn
- Half a red chilli chopped (optional)
- Large handful of fresh spinach shredded
- Sprinkle of fresh coriander
Method:
- Preheat the oven to 200 degrees
- Pierce the skin of the sweet potato in several places and pop in the microwave for aorund 5 minutes, turning half way through. (if you prefer to do it all in the oven, you can but it will take a lot longer!)
- Finish off baking the sweet potato in the oven for around 5 minutes – this will make the skin nice and crispy
- Whilst the sweet potato is baking, crumble the feta into a bowl along with the chilli, tomatoes and spinach. Give it a good mix
- Cut the sweet potato in half and spread the topping out across the two pieces
- Enjoy!
