This recipe is quick, easy and so very tasty! Lots of fresh ingredients that are ALL good for you. Chicken is a lean source of protein and the wholemeal wraps are healthy carbs. All the vegetables are amazing and alongside the homemade guacamole and salsa, you are easily getting your five a day in one meal. The recipe below tends to be more than enough for two people so great for leftovers.
Ingredients (serves 2-3):
- 2 chicken breasts, cut into strips
- 1 medium red onion, sliced thinly
- 1 red pepper, cut into strips
- A small tin of sweetcorn (optional)
- 1 courgette, cut into strips (optional)
- Salt and pepper
- Half a cucumber
- Lettuce
- Tablespoon of cumin
- Tablespoon of paprika
- Juice of a lime
- Wholemeal tortillas/ wraps
- Homemade salsa (see recipe in snacks)
- Homemade guacamole (see recipe in snacks)
- Olive oil
Method:
- Put the chicken, onion, courgette and red pepper into a bowl
- Drizzle over a couple of tablespoons of olive oil and the juice of a half a lime
- Add the cumin, paprika, salt and pepper and mix it all together
- Leave to marinate for a little while (as long as you’ve got)
- Pop the chicken, peppers and onion into a pan and cook on a high heat until the chicken is cooked through (6-8 mins roughly)
- Squeeze over the other half a lime and add the sweetcorn (if using)
- Shred the lettuce and slice up the cucumber into thin strips
- Heat the tortillas in the microwave for about 20 seconds
- Put all the dishes onto the table/ side and assembly your own! I like to spread a bit of salsa and guacamole on the tortilla, pop in a few bit of cucumber and lettuce then the chicken, onion and red peppers before wrapping up nicely and tucking straight in!
