Banana Pancakes

Banana pancakes are perfect for those mornings when you feel like a little treat- but the best thing about them is they are completely guilt free! Made of only eggs and bananas, they are a great source of protein to start the day and should keep you nice and full all morning long. This recipe makes about 6 mini pancakes.

Ingredients:

  • 2 medium eggs
  • 1 ripe banana

Method (couldn’t be easier):

  1. Mash the banana in a mixing bowl
  2. Break the eggs into the bowl and beat them into the banana
  3. Heat up a pan with a tiny bit of oil (coconut or olive oil)
  4. Dollop a couple of tablespoons into the pan to form a small pancake – smaller ones are much easier to flip
  5. After a couple of minutes, gently ease up the edge and see if it is golden underneath, if it is, use a spatula to get underneath and flip it over
  6. Give in another couple of minutes on the other side then pop onto a plate and do the next
  7. You should end up with a stack of 6 small pancakes
  8. Serve with whatever topping you feel like – I love cherries heated gently in a pan with seeds on top!
