Eggs, avocado and tomatoes on toast is possibly one of the best breakfasts you can have. Eggs provide protein and avocado healthy fats. Tomatoes contain lots of lycopene and vitamins and the toast will give you plenty of energy to get through the morning. Plus, it takes about 10 minutes to make so is pretty quick and easy.
Ingredients (for 1):
- 2 eggs
- Dash of milk
- Salt and pepper
- Half an avocado
- Handful of baby tomatoes
- Fresh Coriander to serve
- 1 or 2 slices of bread (wholemeal/ rye/ pumpernickel/ sourdough)
Method:
- Pop bread in toaster
- Break eggs into a bowl with milk and beat together
- Gently heat in a saucepan, stirring gently
- When the toast is done, mash the avocado on top
- Chop up the tomatoes (if you want) and put on top of the avocado
- Once the scrambled eggs are nice and fluffy, season with salt and pepper and pop on top of the toast
- Grab a handful of coriander and serve. Yum!
